INGREDIENTS
- Meatballs:
- 1 lbs ground turkey (You can also use ½ lbs beef and ½ lbs pork)
- 1/3 cup dried bread crumbs
- 3 tbsp chopped flat-leaf parsley
- 3 tbsp grated Parmesan
- 2 tbsp chopped garlic
- 2 tbsp chopped oregano
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 egg, beaten
- pinch of ground nutmeg
- pinch of paprika
- pinch of allspice
- Soup:
- 2 tbsp butter
- 3/4 cup chopped white onions
- 3/4 cup chopped carrots
- Ground black pepper, to taste
- 4 cups chicken stock
- 2 cups white wine (you can also use water if you prefer)
- 1 (28 ounces) can whole tomatoes, drained and halved
- 1 cup cooked pasta of your choice (I prefer angle hair pasta, you can also substitute white beans)
- 2 cups shredded kale
