I just love roasted potatoes, and this takes it to a new level, using lemon juice! This is an easy recipe! Adapted from Southern Recipes.
INGREDIENTS
- vegetable oil cooking spray (or a little olive oil)
- 2 lbs baking potatoes, peeled and cut into 1-inch cubes
- 2 tablespoons lemon juice
- 1 1/2 tablespoons olive oil
- 1/2 teaspoon kosher salt (or to taste)
- 4 -5 garlic cloves, sliced thin (or minced)
