Lime Nicoise Salad

INGREDIENTS

• 2 boiled eggs
• 1 tin of tuna
• 3 tbsp lime juice
• handful of raisins
• 1 apple, diced
• bunch of spring onions, sliced
• 1 green pepper, sliced
• 2 tomatoes, chopped
• 1/2 cucumber, sliced
• tbsp basil
• tsp crushed black pepper
• 50g spinach leaves
• 50g rocket leaves
• 50g lettuce
