  • 1 medium free-range egg
  • 1 tbsp olive oil
  • 175g/6oz streaky bacon, cut into 1cm/½in lardons
  • 100g/3½oz onions
  • 2 free-range eggs
  • 2 free-range egg yolks
  • 300ml/½ pint double cream
  • 1 tbsp chopped parsley
  • 2 tsp chopped chives
  • 1 tsp chopped thyme
  • 50g/2oz cheddar
  • 50g/2oz Gruyère
  • salt and freshly ground black pepper
  • small handful chive flowers, to garnish (optional)
