  • 4 tbsp olive oil
  • 1 garlic
  • 1 bouquet garni
  • 1 onion
  • 1 leek
  • 2 carrots
  • 750g/1½lb courgettes
  • 450g/1lb vine-ripened tomatoes, skinned, seeded and chopped
  • 2 medium-sized potatoes, peeled and cut into small dice
  • 100g/4oz fine green beans
  • 100g/4oz fresh or frozen peas
  • 75g/3oz spaghettini, broken into small pieces, or small pasta
  • salt and freshly ground black pepper
  • extra finely grated parmesan
  • a good bunch (about 50g/2oz) of fresh basil
  • 3 fat garlic
  • 1 vine-ripened tomato
  • 75g/3oz finely grated parmesan
  • 150ml/5fl oz olive oil
