  • 3 lbs. onions, peeled and roughly chopped
  • 1 large Russett potato, peeled and chopped
  • 3 cloves garlic, peeled and chopped
  • 1 Tb. honey
  • 6 cups water
  • 2 Tb. + 1 tsp. Beef Base Paste
  • 2 cups dry white wine
  • 1 Bouquet Garni (small fresh herb bouquet with thyme and a bay leaf)
  • 1 Tb. balsamic vinegar
  • 1/3-1/2 cup heavy cream
  • Salt and Pepper
  • 1-2 sheets frozen puff pastry, thawed
  • 1 cup shredded Fontina cheese
