  • All-purpose flour, for work surface
  • 1 1/2 cups heavy cream
  • 1/2 coffee beans, crushed with a rolling pin
  • 2 light corn syrup
  • 14 semisweet or bittersweet chocolate (64%–72% cacao), chopped
  • 6 (3/4 stick) unsalted butter, cut into 1/2-inch cubes
  • 1/2 coarsely chopped almonds
  • Flaky sea salt, such as Maldon
